  1. You need 200 grams of Vermicelli.

  2. Prepare 4 tbsp of Oil.

  3. You need 2 of Onion finely chopped.

  5. You need 1 tbsp of Coriander leaves chopped finely.

  6. Prepare 1 pinch of Hing.

  7. It’s 1 of Bay leaf.

  8. You need 1/2 tsp of Turmeric powder.

  10. You need to taste of Salt as per taste.

  11. You need 1 tsp of Mustard seeds.

  12. Prepare 4 tbsp of Groundnuts.

  1. Boil ample water in a pan. Add the vermicelli. When they are done drain the water and run cold water over them. Add salt and red chilli powder and mix well. Keep aside..

  2. Heat a kadhai. Add bay leaf and mustard seeds and hing. Let the seeds crackle..

  3. When done add onions and cook till golden brown. Later add tomatoes. When done add groundnuts. Cook for a few minutes..

  4. Add turmeric powder and mix well. Add the vermicelli and mix well sk that the spices are evenly distributed. Cook covered for 5 minutes on slow flame. Garnish with chopped coriander and serve..

This is a combination of lightly roasted sevai with veggies like carrot, green peas and with the crunchy addition of roasted peanuts.
