Porridge beans and plantain. Nigerian Beans and plantain porridge is a meal made up of ripe plantains and beans. This is tasty dish and has become popular over the years, as most parents have discovered it as a way of getting their kids to eat beans. The addition of the ripe plantains, gives the meal, that sweet taste that kids love so much.

Beans and plantain was and still is my favourite.

A couple of months ago, a friend taught me a new method.

Finally, when the beans are one half cooked, add yam cubes and keep on cooking until the yam is soft enough.

You can have Porridge beans and plantain using 7 ingredients and 5 steps. Here is how you achieve it.

Ingredients of Porridge beans and plantain

  1. You need of Beans.

  2. You need of Onions.

  3. Prepare of Fresh pepper.

  4. It’s of Palm oil.

  5. You need of Seasoning.

  6. Prepare of Plantain.

  7. Prepare of Vegetable oil for frying.

Add turkey meat, crayfish, salt and seasoning and stir well.

Keep on cooking the porridge until the wanted thickness is achieved.

When the beans porridge is soft, add the onions, crayfish (if using it), pepper and seasoning.

Porridge beans and plantain instructions

  1. Wash beans and put in the pot to cook for an hour.

  2. Parboil by removing water and put back in the pot.

  3. Add onions and water and leave to get more soft.

  4. Add fresh pepper, palm oil and seasoning. Cover so the water can get dry,break the beans with a wooden spatula and allow to simmer. Your dish is ready..

  5. Slice plantain and deep fry in hot oil.

Note: To get the most out of beans, it is best to cook it with one of the following: sweet yam, ripe/unripe plantain, sweet potatoes or baby corn.

Stir in the chopped spinach, adjust seasoning and serve with some rice.

Beans popularly known as Ewa among the yorubas is a source of Protein and Fibre.

Beans is enjoyed in different ways, Ewa Aganyin (Mashed Beans and Sauce), as a Porridge or as a side dish to accompany Rice, Yam etc and can be made in different ways.

When made into a Porridge/Pottage, It can be had with Garri, Plantain, Yam and so on.
