Best of all you can even make these ahead of time.
I usually make them on a Sunday evening and Monday morning are so much easier.

I decided to kill two birds with one stone.
This gave birth to the idea of savory vegetable muffins recipe.
I just needed to decide on the base cereal for this vegetable savoury muffins.
Oats Semolina Savoury Muffins instructions

Dry roast oats and semolina for 2-3 minutes. Remove in a bowl.

Add soda, salt, curd, 1 tablespoon oil/ghee and water to the mixture. Mix and set aside for some time..

Preheat oven @180C after adding curd and water the mixture started bubbling..

In a pan heat remaining 2 tablespoon oil or ghee and add cumin seeds, aesofotida and fry..

Add onion and saute till golden brown..

Add the chopped vegetables. You can add any veggies of your choice like mushrooms, grated carrot etc….

Add all the spices. Here I have used Indian spices but you can always use any flavour of your choice like pizza seasonings, ginger-garlic paste etc…..

Mix these with oats and sooji mixture..

Also add your chopped dill and coriander leaves and mix together well..

These wont rise much. Pour the mixture in loaf or cake tin or in muffin cups like me and bake for 20 minutes. If baking in cake or loaf tin then the baking time will increase up to 30-40 minutes..

Bake until toothpick Inserted comes out clean. Serve hot with sauce or chutney or as is..
