Instant Semolina Handwo muffins. Handvo is a traditional Gujarati dish which is loved by everyone. In this recipe we will make Instant Handvo using semolina (rava). In this rava handvo we have added carrots and some spinach to make it healthy.
When husband's away for a couple of weeks, i get to live with my parents for that time.
Handwo being very famous food of Gujaratis there should be a healthier option to choose for.
I am presenting handwo that is instant and made with Semolina.

You need of fine semolina.

Prepare of chickpeas flour.

Prepare of rice flour.

It’s of curd.

It’s of ginger garlic chilli paste.

Prepare of bottle gourd grated.

It’s of fresh coriander chopped.

Prepare of Salt.

It’s of turmeric powder.

You need of red chilli powder.

It’s of sugar.

It’s of white sesame seeds.

It’s of soda bi carbonate.

Prepare of Oil to Grease the tin.
The handvo I am showing at present is an instant one.
Semolina (Rava), chickpea flour, curds, vegetables, and a few fresh spices are the chief ingredients to make this dish.
You need not ferment the batter to make the instant handvo.
This pancake is delicious, soft, and balanced.
Instant Semolina Handwo muffins step by step

Take Semolina, chickpeas flour and rice flour in a bowl. Add in salt and water to make a thick batter. Cover and rest it for 15-20 mins. Later add grated bottle gourd and chilli ginger garlic paste into it and combine well..

Now add turmeric powder and red chilli powder. Add salt to taste and white sesame seeds. Mix well..

Add chopped coriander, sugar and soda bi carb.and combine well. Grese the muffins tray with oil..

Pour the batter. Bake in preheated oven at 200°c for 18 mins. Take out the tray apply some oil on top of muffins and again bake for 4-5 mins..

Serve hot with tea..
Just combine the ingredients as per directions and make the batter.
I'm keeping things simple by using chickpea flour and semolina.
I find this blend gives a beautiful texture to my vegetarian Indian savoury cake.
