Punjabi baingan ka bharta requires that the eggplant is roasted.
This can be done in several different ways.
The first is to roast it on a gas cooktop by just placing the eggplant straight on the burner and keeping the flame on low setting.
Keep turning and cooking until all the skin on the eggplant is charred and the inner flesh looks really soft.

Grease the washed baingan with little bit of oil.with the help of fork prick the baingan randomly.cook it on the flame till its completely done..

Repeat the process with other baingan as well.Now cover the roasted baingan so that it cools down and becomes easy to handle.Remove the skin of the roasted baingan and mash it well..

Now take a pan or kadhai.Heat 2 tbsp oil.Add chopped onion and cook for 2 mins..

Now add the dry spices.red chilli powder,haldi powder,coriander powder,garam masala powder,hing.mix everything and cook for few seconds..

Add chopped tomato,green chilli and ginger garlic paste..

Sprinkle salt and cook till tomatoes becomes mushy or till oil seperates..

Add the roasted and peeled baingan to the tarka..

Cover and Cook for couple of minutes.srinkle some coriander leaves..

Dish out and garnish with coriander leaves and some lime slices.Serve hot with paratha,roti,naan….
