  3. You need 1 of egg (I use organic).

  4. You need 160 g of grated carrots (I use 2 large organic carrots. washed but not peeled).

  5. Prepare 40 g of raisins/sultanas (organic) or seeds/nuts.

  6. Prepare 70 g of plain flour.

  7. You need 70 g of wholemeal plain flour.

  8. You need 1 1/2 tsp of Baking powder.

  9. It’s 2 tsp of combination of cinnamon, ground ginger and nutmeg.

Spoon ¼ of the icing on top and spread in an even layer.

Add another layer of cake and spread with another ¼ of the icing.

Set the last cake layer on top with the bottom up to ensure a very flat surface.

Spread the rest of the icing over the top and sides.

  1. Pre-heat the oven to 180°C (fan). In a large bowl, mix oil and sugar using a whisk. Add the egg and mix until well combined - looks creamier..

  2. Add the carrots and raisins (or seeds/nuts, if preferred), combine well..

  3. Add the dry ingredients a third at a time, mixing lightly with a spatula. Try not to knead the mixture!.

Growing up, my mom made it for my birthday every year and the ONLY thing that competed was a batch of carrot cake cupcakes on the side.
