Aloo Palak, the potato and spinach curry is one of the classic curries among Pakistani cuisines.

This vegan curry is delicious to enjoy with roti/ chapati, naan bread, pitta bread or rice.

  1. It’s 1 bunch of Palak.

  2. Prepare 2 of Potatoes(either boiled or cooked in oil).

  3. It’s 1 tbsp of Roasted besan(best alternative for cream).

  4. You need 1 of Tomato.

  5. It’s 2 of Green Chillies.

  6. It’s 1 piece of Ginger.

  7. Prepare 1/2 tsp of Salt.

  8. Prepare 1 tsp of Coriander powder.

  9. It’s 1/4 tsp of Nutmeg powder.

  10. You need 1/4 tsp of Cumin seeds.

  11. You need 1 tsp of Oil.

  12. Prepare Pinch of Asafoetida.

  13. It’s 1/2 tsp of Chilli flakes or desi ghee ka tadka.

I love to cook this healthy spinach dish often as it is quick to make and also healthy.

Potato in paalak curry step by step

  1. Wash and drain palak. Put a pan with water and salt to boil(use that much water only where spinach will dip).

  2. When water boils put palak (dont cut, otherwise nutrients may leech)and cover for 2-3 mins and switch off the flame and leave covered for 5 more mins. now strain palak..

  3. When palak is cooled blend it with green chilli, tomato and ginger.

  4. Heat up pan add oil then cumin then asafoetida then nutmeg powder and add palak paste once it starts boiling add besan, salt and stir nicely so that no lumps are formed(another way of adding besan is to add water to besan and make a lump-free paste).

  5. Cover the pan and let it cook for 5 more mins on slow flame..

  6. Finally, add potato wedges and chilli flakes and serve hot..
