Navratan korma. There is another vegetable korma recipe that I use at home which I really like but it's not quite perfect. So when I saw this one I was very excited! Unfortunately my husband and I were disappointed.

The "gems" are the fruits, vegetables, and nuts that make up the curry.

Vegetable korma was created in imperial kitchens and served to kings, queens, and other royals during the Mughal era in India.

This is an Indian vegetable korma with nuts, paneer cheese, and an adjustable list of vegetables.

You can cook Navratan korma using 25 ingredients and 13 steps. Here is how you cook that.

Ingredients of Navratan korma

  1. Prepare of diced carrot.

  2. You need of diced potato.

  3. It’s of diced green beans.

  4. It’s of green peas kernels.

  5. Prepare of cauliflower florets.

  6. It’s of diced green bell pepper.

  7. You need of medium sized onion.

  8. You need of Ginger-garlic paste.

  9. It’s of cashew nuts.

  10. It’s of almonds.

  11. Prepare of poppy seeds.

  12. Prepare of sour yogurt.

  13. You need of cottage cheese/ paneer cubes.

  14. Prepare of heavy cream.

  15. You need of green chillies.

  16. It’s of whole peppercorns.

It is in a tomato-cream sauce as opposed to the usual yogurt based sauce. 'Navratan' means 'nine gems,' so choose nine of the vegetable, nuts, and paneer ingredients; you can leave out the elements you don't want to use, or add them all so it is 'ten gems' if you wish.

Navratan korma is an easy recipe because after you are done with making the paste.

Then all you have to do is brown the onions with whole garam masala, add the paste, curd, veggies and let the korma simmer till the veggies are cooked.

This Restaurant Style Navratan Korma (Vegetable korma) recipe is a mildly spiced, slightly sweet, creamy based delicious Indian Mughlai curry and gets its name Navratan (meaning nine gems) from the nine different veggies, fruit and nuts used in it.

  1. First in a deep vessel add some water & salt then boil all the vegetables except green bell pepper..

  2. Now cut the onions into cubes & in another saucepan add 2 cup of water then boil the onion cubes untill they become soft & translucent..

  3. Once the onion is done switched off the flame, drained out the excess water & cool it down a bit then make a fine paste adding 1 green chilli with it..

  4. Soak almond,cashew & poppy seeds in warm water for 30 minutes then peel off the skin of almonds & make a fine paste out of it..

  5. Now in a pan lightly fry the diced green bell pepper then slightly fry the paneer cubes & keep those aside..

  6. In the same pan heat up some more ghee/oil & add all the whole spices(bay leaf,peppercorns,black cardamom, green cardamoms, cinnamon, cloves) & fry them until crackle & the aroma comes out..

  7. After that add the onion paste into the oil & saute for couple of minutes. Then add Ginger-garlic paste & saute for few minutes.

  8. Now beat the yogurt & transfer into the pan.Add the nut-poppy seeds paste right after that & stir well.

  9. Now stir & saute the whole mixture well so that it doesnt stuck to the bottom of the pan..

  10. Next transfer all the boiled vegetables along with the water in which it has been boiled (vegetable stock) & stir well then cover it up & cook for 5-7 minutes..

  11. Now add previously fried bell peppers, paneer cubes & 2 tablespoon of heavy cream. After that adjust the salt & let this cook for another 2-3 minutes.

  12. Finally add garam masala,few drops of ghee & 2 slitted green chillies & switched off the flame..

  13. Sprinkle some chopped corriandar leaves over it & Serve hot with rice or chapatis..

Navratan Korma is a rich and creamy dish made with an assortment of veggies, fruits and nuts.
