Navratan korma. There is another vegetable korma recipe that I use at home which I really like but it's not quite perfect. So when I saw this one I was very excited! Unfortunately my husband and I were disappointed.

The "gems" are the fruits, vegetables, and nuts that make up the curry.

Vegetable korma was created in imperial kitchens and served to kings, queens, and other royals during the Mughal era in India.

This is an Indian vegetable korma with nuts, paneer cheese, and an adjustable list of vegetables.

You can cook Navratan korma using 24 ingredients and 5 steps. Here is how you cook it.

Ingredients of Navratan korma

  1. You need 2 of medium carrots cut into 1/2 inch cubes.

  2. You need 2 of medium potatoes cut into 1/2 inch cubes.

  3. It’s 8-10 of cauliflower florets.

  4. You need 7-8 of beans cut into 1/2 inch pieces.

  5. You need 1/2 cup of peas.

  6. You need 10 of button mushrooms halved.

  7. Prepare 1 cup of cashew nuts(keep aside 5-6 pieces).

  8. It’s 40 gram of lotus seeds.

  9. It’s 4-5 of cloves.

  10. Prepare 4-5 of Black pepper corns.

  11. You need 1 of cinnamon stick.

  12. You need 4-5 of Green cardamom.

  13. It’s 4 of onions roughly diced.

  14. It’s 1 tbsp of Garlic paste.

  15. You need 1 tbsp of ginger paste.

  16. Prepare 1 tbsp of green chilli paste.

  17. You need 1/2 cup of yoghurt.

  18. You need 2-3 of Green chillies chopped.

  19. Prepare 150 gm of paneer cut into cubes.

  20. It’s 1/2 cup of Fresh cream.

  21. It’s 1 tbsp of raisins.

  22. It’s as needed of Oil/ ghee for frying.

  23. You need to taste of Salt.

  24. Prepare 1 tsp of sugar.

It is in a tomato-cream sauce as opposed to the usual yogurt based sauce. 'Navratan' means 'nine gems,' so choose nine of the vegetable, nuts, and paneer ingredients; you can leave out the elements you don't want to use, or add them all so it is 'ten gems' if you wish.

Navratan korma is an easy recipe because after you are done with making the paste.

Then all you have to do is brown the onions with whole garam masala, add the paste, curd, veggies and let the korma simmer till the veggies are cooked.

Navratan Korma is a simple yet delicious recipe, which can be prepared at home very easily without putting in much effort.

  1. Boil onions and cashews,strain, cool and puree.Boil carrots, cauliflower, french beans, potatoes, green peas in boiling salted water till done. just 1 min before straining, add mushrooms.strain..

  2. Heat ghee or oil and fry lotus seeds (makhana).keep aside.fry paneer cubes. Keep aside. Fry raisins and cashews and store separately..

  3. In 2- 3 tbsp ghee, add cloves,pepper corns, cinnamon, cardamom. When they begin to crackle, add ginger-garlic-chilli paste and cook for 2 min. Add onion-cashew paste and cook for 7-10 min.add chopped chillies and yoghurt.Cook for 2 min. Add boiled vegetables, salt, sugar and 2 glasses of water.stir and cook for 3 min..

  4. Add fried makhana and paneer. bring to a boil and finish with fresh cream..

  5. Garnish with fried raisins and cashews. Serve..

Firstly, place the potatoes, beans, capsicum and carrots over a chopping board and chop them.

Navratan korma is commonly found on the Indian restaurant menus.
