Well, its from a homemade Urad Dal Vada Mix (recipe below) that you can prepare at home - very easy and economical too (rather than buy the commercial packets laden with preservatives). In Mysore Rasam, the spice paste we make brings out the richness in the rasam.
Nimbu Saaru or Lemon Rasam is one of the first dishes I learnt from my mother.
It is very comforting dish of red lentils cooked with turmeric and blended with lemon juice, finely chopped tomatoes, green chilli and ginger and finally tempered with aromatic cumin seeds and curry leaves.
I learnt this 'instant lemon rasam with no tomatoes' recipe from my mom.

Prepare 1 cup of mix dal.

It’s 1 tbsp. of Ginger chilli paste.

Prepare 1/4 cup of onion.

Prepare Pinch of asofoetida.

You need of Oil for frying.

Prepare 1 tsp of urad dal.

Prepare 2 tbs of boiled Tur dal.

You need 1 tbsp. of Jeggary.

Lemon Rasam is one of the traditional rasam variety in Tamil Nadu.
Unlike tomato rasam or paruppu rasam, we don't add tamarind in the rasam, instead we add lemon juice.
Dalvada with lemon Rasam step by step

Soak mix dal 4-5 hrs. Grind now add chopped onion coriander salt asofoetida, ginger chilli paste, mix well and make round shape vada and attach in a stick..

Heat oil in a pan. Add urad dal, dry red chilli. And chopped tomatoes saute add salt red chilli powder, jaggary cook on mid flame till tomatoes soft. Now add boiled tur dal and rasam powder, lemon juice and lemon wedges. Add 1 glass water. Cook for 5-7 min..

For tadka:- Heat oil, tempered mustard seeds, asofoetida, curry leaves and add in rasam. Chop coriander and add. Serve hot with vada. Yummy tasty Dalvada with lemon rasam is ready to serve..
Transfer it to a bowl and close the lid immediately so that the aroma does not get away.
Add the lemon juice when the rasam is hot, so as to get nice color.
