Tourlou - Tourlou. Tourlou tourlou, which literally means all mixed up, is really the most wonderfully delicious mix up of vegetables! Perfect for summer when garden fresh veggies are everywhere, a few simple ingredients and you're on your way to one of the best traditional vegetable meals in all of Greek cooking. A staple food in most Greek households, Tourlou Tourlou (meaning "all mixed up") is our version of the French ratatouille dish.

Tender-crisp it's not, but it is certainly delicious.

Tourlou tourlou is easy to make, but it does require a bit of hands-on time for all the prepping!

You gotta peel the potatoes and onions, you can choose to peel the eggplant and zucchini if you'd like; I tend to half peel mine (pictured above).

  1. It’s 2-3 of medium-sized potatoes.

  2. It’s 2-3 of medium-sized zucchinis.

  3. You need 1 of eggplant.

  4. It’s 1-2 of carrots.

  5. Prepare 1 of sweet red pepper.

  6. You need 1 can of diced tomatoes.

  7. You need 1 can of diced tomatoes.

  8. You need 1 tsp of tomato paste.

  9. It’s 1 of level tsp sugar.

  10. You need 1 of medium-sized onion, finely chopped.

  11. Prepare 1-2 cloves of garlic (optionally).

What's important though, is the slicing of the vegetables - especially the potatoes.

Tourlou is a mixed vegetables dish, an easy, healthy and cheap recipe to make that includes whatever you've got in the fridge.

My grandmother who was from Pontus, used to make it often when I was little and to this day, I follow her recipe word for word!

Tourlou Tourlou* (pronounced Toodloo Toodloo) is a baked vegetable dish with a suprising sweetness.

Tourlou - Tourlou instructions

  1. Cut the eggplant into cubes and let them sit for about an hour in salted water to lose their bitter taste. Then, dry them well..

  2. Cut the potatoes into cubes, the carrots into round slices, julliene the peppers and cut the zucchinis into slices..

  3. Finely chop the onion and the garlic and sauté in a deep pot for a couple of minutes until they get golden..

  4. Gradually add the vegetables and all the spices and finally the tomato with the tomato paste and the sugar. Mix all the ingredients well..

  5. Add water and boil for about 40 minutes over moderate heat until all the water is absorbed and the vegetables cook..

  6. Just before the 10 final minutes of cooking time add the vegetable stock cube for extra taste..

I kind of don't want to reveal the source of the sweetness, because it comes from an ingredient many people think they don't like.

Tourlou Tourlou is a big pile of different vegetables, cooked all together Greek-style for a long time - would you believe two hours?

With such a long time in the oven, the vegetables take on a roasted quality, just better.
