  1. Put all ingredients mentioned under the ‘To Grind’ tag in a blender.Blend all ingredients till a smooth green paste is formed.Do not add water while blending.Check the seasoning of this paste..

  2. Now put all vegetables, mushrooms and chicken in a big bowl.Pour the green paste over them.Gently toss them, so that everything is coated well with green paste..

  3. Now let this marinated vegetable-chicken mixture stand for 20 minutes.Put oil in a frying pan and keep it on medium flame.Then take one skewer and insert mushroom, vegetables and chicken pieces..

  4. Gently place the skewer in the hot oil.Load all skewers the same way and arrange them in the pan..

  5. Slowly rotate them in the pan so that they get evenly roasted from all sides.When vegetables turn brownish, check the chicken pieces.If chicken pieces are cooked then kebabs are ready..

  6. Don’t overcook or else the chicken will not remain juicy.Serve hot with pudina chutney..

Although I used fresh lemon juice portebello mushrooms and added steak to the kabobs.

They were delicious the entire family ate them up!
