We served it with some suya for lunch this past week and it was incredibly delicious. This couscous recipe is almost everything Jollof, the only difference is that, this takes so much of a shorter time to put together.

Prepare 2 cups of Couscous.

It’s 1 Cups of turkey stock.

It’s 1/2 of cksp veg oil.

You need 2 of fresh tomatoes chopped.

You need 1 of bulb onions diced.

You need 1 of green bell pepper diced.

Prepare 4 strand of spring onions diced.

You need 3 of fresh pepper diced.

It’s to taste of salt.

You need 2 of knorr cube.

Growing up my mom will rarely make Jollof couscous, I think she made it on New Year or birthdays.
Jollof Couscous step by step

Bring turkey stock to a rolling boil, add in couscous and cover tightly. Remove from heat and set aside for 5-6mins.

Add veg oil to a large pan and heat slightly. Add in the chopped onions, tomatoes and pepper stir and then add salt and knorr cube; stir and leave to cook for 3mins.

Lightly fluff the cooked couscous with a fork, add into the vegetable mix sauce and combine together.

Add in the green bell pepper and spring onion. Taste and adjust for seasoning..

Serve jollof coucous with grilled turkey..
We will eat Jollof rice and Jollof spaghetti all year long but comes special occasion, my mom will make Yassa, pizza or Jollof couscous.
