  1. It’s 1 kg of idli batter.

  2. It’s 1 tsp of baking soda.

  3. It’s to taste of salt.

  4. Prepare 2 tablespoon of Oil.

  5. It’s 2 tablespoon of Curry leaves.

Deep fried version: For this idli fry, for deep frying version, choose the last left over batter for making idli.

This firm textured idli out of the last batter is best for deep frying in oil, than the soft spongy ones.

Also keep the idli in fridge for an hour to chill for best results.

Oil should be really hot while dropping the idli wedges.

Fried idli with chutney instructions

  1. Mix the batter with salt and baking soda and greesr the idli stand with oil.

  2. Now in a steamer heat the water and pour the batter into the stand and steam for fifteen minutes.

  3. Then give the tasks and fry the idli in the oil in a low to medium flame and fry till it becomes crispy and serve with coconut chutney and sambhar.
