Recipe: Tasty Vegetable Uthappam Delicious, fresh and tasty.

Vegetable Uthappam. Vegetable Uthappam is a thick and spongy dosa variation prepared with slightly sour Idly Dosa batter and different vegetable toppings, which makes it an excellent breakfast. It can be made with leftover idli dosa batter. Vegetable Uttapam can be served for breakfast or as a snack.  Uttapam can be made with a variety of toppings like onion, tomato, coconut, and many others.

Once you have the batter ready, all you need to do is cut some vegetables, mix them in the batter and you're good to go.

There are several varieties of uthappam and your imagination's the limit.

Ingredients of Vegetable Uthappam

  1. You need 2 Cup of / Glass Idli Rice.

  2. You need 3/4 Cup of Urad dal.

  3. It’s 1 Cup of Cooked rice or puffed rice soaked.

  4. You need 1/2 tsp of Methi.

  5. You need of Water as required.

  6. Prepare 1 of Onion chopped.

  7. You need 1 of Carrot Grated.

  8. It’s leaves of Coriander.

  9. You need of Salt.

  10. It’s of Coconut Chutney.

  11. Prepare 1/2 Cup of Grated Coconut.

  12. Prepare 1 of small inch ginger.

  13. Prepare 1 of small clove garlic.

  14. It’s to taste of Salt.

  15. Prepare 4/5 of Green Chillies.

  16. It’s leaves of coriander.

  17. It’s 2/3 Tbsp of Channa Dal.

  18. Prepare of Oil.

  19. It’s leaves of Curry.

  20. It’s 2 of Dry Red Chilli.

  21. You need 1 tsp of Mustard seed.

Press the vegetables with a spoon to settle them down.

  4. Coconut Chutney : In a mixer add coconut,ginger,garlic,green chilies and salt add little water and grind to smooth paste.Then add the channa dal and grind again..

  5. For the tempering :Heat oil in a pan,once hot add mustard seed,dry red chilli and curry leaves and add it to chutney..
