You start out cooking them like an omelet…except you use way less egg in the skillet so that they are thin enough to 'roll' and thick enough to hold cheese and other ingredients inside. Crack an egg into a small bowl, then slide the egg into the tortilla pocket and add a sprinkle of salt.

The egg is cooked in a bit of butter then topped with a tortilla and covered with a pinch of cheese.

Flip the tortilla with egg omelet in the pan and turn down the heat to medium.

Brush oil over a frying pan.

Add grated cheese, pepper, paprika, salt, parsley and mix well.

Place another tortilla on top and let it cook, covering the pan.
