Vegetable Couscous and Gizdodo. Gizdodo is a simple side dish that is often served with rice; especially Jollof rice. It is easy to deduce from the name that this meal will be basically made of gizzards and ripe plantain. Hence Gizdodo (Gizzard & Dodo) and we all know that dodo is just another name for ripe plantain.
For garnish and colour, you can toss in diced onions, diced carrots, diced spring onions or any vegetable of choice.
Gizdodo is a perfect side to Rice, Couscous, Spaghetti or any other Pasta of your choice.
Pour in the couscous and using a fork in a light movement try to separate the grains to prevent them sticking together.

You need 1 of and half cups Couscous.

It’s 1 cup of Stock(Gizzard).

Prepare of Olive oil.

Prepare of Asian Vegetable mix(carrot, bell pepper, green beans etc,).

You need 4 of Attarugu(chopped).

It’s of Onions(chopped).

It’s of Shrimps.

It’s to taste of salt.

Make your gizdodo and set aside. Refer to My Gizdod recipe in one of my posts..

Put your Couscous in a Microwaveable bowl, dash in a little olive oil, add in the stock, mix properly and cook in a Microwave for 5mins..

While Couscous is cooking, set your nonstick pan on fire, add 4 tablespoons olive oil. Allow to heat up then pour in the mixed vegetables and stir fry on high heat for 3mins..

Add in your Shrimps, Chopped Onions and attarugu, keep stirring to mix with the vegetables for 3mins..

The Couscous should be brittle as you stir very well. Add it to the fried vegetables and stir continuously till everything is well mixed..

Correct seasoning and remove from heat after 3mins and serve hot, with your Gizdodo..
As I said earlier, this can be served with rice, beans or yam, In my case, I served with white boiled rice and added some fried plantain cubes.
If you'll be using frozen vegetables, try as much as possible to use fresh carrots at least.
Most frozen vegetables aren't flavourful and may taste bland when added to the couscous, amp up the flavour a bit by using fresh sweet carrots ans sweetcorn.
A very important tip for cooking Couscous is using equal amounts of water/stock and Couscous.
