Ingredients of Kerala Red Spinach Stir Fry

  1. You need 1 of big bunch of red spinach.

  2. It’s 5-6 of slit green chillies.

  3. Prepare 6-7 of big cloves of garlic, sliced.

  4. It’s 10-15 of pearl onions/shallots, peeled.

  5. You need 1 tsp of mustard.

  6. You need 3 tsp of coconut oil.

  7. Prepare 1/2 tsp of turmeric powder.

  8. Prepare to taste of Salt.

  1. Heat oil in a kadhai. Add mustard seeds..

  2. When the mustard seeds pop, add green chillies, garlic and shallots..

  3. Fry for a few seconds till the garlic starts changing colour..

  4. Add washed, cleaned and cut spinach leaves..

  5. Add salt and turmeric powder..

  6. Mix well and keep stirring till the spinach leaves shrinks in size and starts leaving water. Close and cook on low flame till done..

  7. Do not add water while cooking as the spinach will take water during the cook..

  8. Once done, mix everything well and garnish with grated coconut if you prefer..
