How to Blends Perfect Kothu Chapathi Delicious, fresh and tasty.
Kothu Chapathi. I always have leftover chapati after mealtime and it becomes dry over time. I do a stir-fry, chapati upma or kothu with leftover chapati. Its a wonderful way to give life to dry chapatis.
Veg kothu chapati/ Kothu chapati is a delicious combination of minced chapati and veg kurma tossed with some onions, tomatoes and masala served usually with onion raita as dinner or evening snacks or mini tiffin.
This recipe is a copycat recipe of the traditional veg kothu parotta that is popular in South India where parotta is used instead of chapati and comes with variations like veg kothu.
Now to make the kothu chapati, place a kadai on flame and pour oil into it.
You can cook Kothu Chapathi using 11 ingredients and 6 steps. Here is how you cook that.
Ingredients of Kothu Chapathi

Prepare 4 of Chapathi.

You need 1/2 cup of any kuruma/salna.

Prepare 1 of onion chopped.

It’s 1 of tomato chopped.

You need of Mustard seeds to temper.

It’s 1 tbsp of oil.

Prepare leaves of Curry.

You need 2 of Egg.

It’s of Spice Powder (1/2 tsp red chilli powder, 1/2 tsp coriander powder, 1/4 tsp garam masala, a pinch of turmeric powder).

Prepare to taste of Salt.

It’s of Coriander leaves to garnish.
After it heats up add fennel seeds, cinnamon stick, curry leaves, chopped green chillies, onions and sauté on low flame until onion seems half cooked.
Veg kothu chapati great alternative to veg kothu porotta and also a great way to use your leftover chapati.

Cut chapathi into pieces. Keep it aside.

Heat a heavy bottomed pan with oil and temper with mustard seeds. Add onion, curry leaves and sauté well. Add tomato and sauté well. Add salt and all spice powders. Sauté until raw smell goes..

Pour egg and scramble it until it’s 3/4th cooked.

Add chapathi and kuruma/salna. Give it good mix..

Use a stainless steel ladle or cup which has sharp edge and mince the mixture well with pounding action..

Garnish with coriander leaves and serve hot!.
