Recipe: Appetizing Avocado Egg Sandwich Delicious, fresh and tasty.

Avocado Egg Sandwich. I made it a "Three Cheese" Egg and Avocado Sandwich: I just added a third cheese (Muenster) on top of the second slice and then piled on the ingredients as instructed. It helped to hold the avocado chunks in the place too. I used whole grain wheat bread and it was killer.

To make an egg avocado sandwich you will need hard boiled eggs, avocado flesh, yogurt, mayo, dijon mustard, cress and lemon juice for the filling.

Chop up the egg and cut the avocado then mix together all the ingredients then fill your choice of bread with the filling - in this recipe I use wholemeal pitta breads.

Lighten up classic egg salad by swapping in creamy avocado instead of using mayonnaise.

  2. You need of of bread your choice.

  3. Prepare of Avocado.

  4. It’s of Lettuce.

  5. You need of Cheese your choice.

  6. You need of Mayo.

  7. Prepare of Salt & Pepper.

Pour the mixture over the eggs and then add the capers, celery, green onion and avocado.

To build the sandwiches, scoop about a quarter of the egg salad onto one piece of bread.

Top with tomato, lettuce and another piece of bread.

Repeat to build the remaining sandwiches.

Avocado Egg Sandwich step by step

  1. Fry eggs in pan you can break yolks if you would like. Salt and pepper are your eggs. I used two eggs just happen to get double yolks that day..

  2. Toast your two slices of bread. Let them cool add your mayo, lettuce, cheese and avocado..

Remove from heat and mix in cheese; season with salt and pepper.

Build sandwiches with rolls, hot sauce, eggs.

Spread the avocado on the rye bread.

Slice the eggs into thin rounds and place on top of the avocado.

Drizzle some chilli sauce over the eggs, scatter the cress on top and add a good grinding of black pepper.
