  2. Pre heat oven to 375 degrees.

  4. Lightly spray a 10×13 ×3 inch baking dish with cooking oil I use olive oil.

  5. Spread about 1 1/2 cups meat sauce in bottom.

  6. Lay 4 noodles in bottom side by side.

  7. Cover noodles with about 1 cup of the goat cheese mixture.

  8. Add 6 cheese slices in rows.

  9. Then 1 1/2 cups meat sauce repeat layers two more times ending with meat sauce.

  10. Sprinkle on shredded Parmesan cheese and parsley.

  11. Bake for 1 hour covered tightly with foil. Ill lightly spray the foil with cooking spray so the cheese doesn't stick.

  12. Then bake for 15 more minutes with foil cover off.

  13. Let rest for 10 minutes then enjoy with garlic bread and or salad..

It was also my first introduction to ricotta cheese and goat cheese.

It was a revelation, and making it again brings back a lot of memories.

I've made a lot of lasagnas since, including this lasagna for two, but I'm always drawn back to Barefoot Contessa's.

We tend to eat lighter dishes during the warmer months, and I find that of late I am enjoying more and more meatless meals such as this one.
