Nutritious Rice Flour Pancakes for Weaning Babies. Pancakes are easy to pack up and bring with you out, and these healthy pancakes are great to eat in buggies (strollers). They don't drop crumbs everywhere, and they don't leave behind sticky fingers. The pancakes themselves are also easy (and clean) for baby-led weaning.
Today I'm sharing one of my favourite recipes that I used when weaning my baby… super easy and delicious Two Ingredient Pancakes.

You need of Water (soy milk or milk).

These pancakes are ideal for baby led weaning as they are soft to eat and really easy for babies to pick up with their hands.

Combine and sift the rice flour, kinako, baking powder, and sugar. I like to place the ingredients in a bag and shake..

Add the soy milk and mix. Be careful not to over-knead. The dough will be a bit stiff, but dont add water!.

Spread some oil (not listed) on your heated electric griddle and pour the batter onto the griddle using a spoon. Dont worry about its shape here..

Once one side has cooked, turn your pancake over, then press down on it using a spatula. Flatten to a thickness of about 1.5 cm. Turn over repeatedly and once both sides have cooked to a nice browned color, its done!.
I think these pancakes make a really healthy and delicious breakfast but can be served any time of the day.
Storing & Freezing Mix rice flour, sugar, baking powder and salt in bowl.
Beat in milk until mixture has a smooth consistency.
Add the beaten egg and oil and mix until just blended.
Add a little oil to griddle and cook on med heat.
