Authentic Pad Thai instructions

  1. Soak noodles in boiling water for 10 minutes until soft, drain the water..

In fact, one of the most famous Pad Thai vendors in Bangkok makes theirs bright orange!

That colour, however, comes from shrimp tomalley, not ketchup or paprika.
