Raw mango chutney. The Sweet and Spicy Raw Mango Chutney is a favourite accompaniment to most Indian meals. Each region of India has a specific way of making it. But I like it just the way my mother always makes it.

Raw mango chutney recipe (green mango chutney) - a yummy chutney recipe with bursting of mixed flavors like sweet, spicy, tangy.

The mango is roasted on direct flame.

This provides little smoky, charred flavor to the chutney.

You can have Raw mango chutney using 15 ingredients and 3 steps. Here is how you cook it.

Ingredients of Raw mango chutney

  1. You need 1 of Raw mango grated.

  2. Prepare 2 tsp of Channa dal.

  3. It’s 1 tsp of Urrad dal.

  4. You need 3-4 of Red chilli.

  5. Prepare 1 tbsp of jaggery.

  6. Prepare 0.5 tsp of coriander seeds.

  7. It’s 1 tsp of cumin seeds.

  8. You need 0.5 tsp of methi seeds.

  9. You need 3 tsp of roasted gram(hurigadale).

  10. Prepare of Salt.

  11. You need 1 tsp of mustard seeds.

  12. You need leaves of Curry.

  13. Prepare Pinch of turmeric.

  14. Prepare of Oil.

  15. You need of Hing.

It is little messy to roast on flame.

Raw Mango Chutney is a mixture of Raw Mango, Garlic, Green Chilies, Cumin Seeds, Coriander Leaves, Curry Leaves, Pudina, Ginger.

This chutney is eaten in different parts of India due to its vibrant flavour and lip-smacking taste.

Raw mango chutney - this recipe of green mango chutney is my mom's and we usually have this mango chutney with dal-rice or with rice kanji/pej (savory rice porridge).

Raw mango chutney step by step

  1. In a pan take a tsp of oil. Add urrad dal+ Channa dal+cumin seeds+coriander seeds+methi seeds+red chilli+hing.Sauté for a awhile until it turns aromatic.

  2. Now in a mixer jar add roasted gram + raw grated mango + step 1 ingredients and grind smooth without adding water..

  3. Now in a pan take a tsp oil + mustard seeds + urrad dal + curry leaves. Once it splutters transfer blended mixture from step 2. Add salt + jaggery + pinch turmeric and mix well. Serve this with idli/dosa/rice..

Since the mangoes are raw, so this chutney is a sour one much unlike the Sweet mango chutney i had posted earlier.

This tangy green mango chutney is prepared by crushing and blending raw mangoes with coriander leaves and basic spices.

The chutney prepared with this recipe has perfectly balanced tangy and spicy taste as chillies, garlic and ginger gives it a spicy touch while coriander leaves and cumin seeds bring their own nuances.
