Ingredients of Chickpea "cookie dough"

  1. You need 8 of dates, soaked.

  2. You need 250 grams of cooked chickpeas (or canned).

  3. You need 2 tbsp of peanut butter (or other nut butter).

  4. It’s 1 tsp of carob powder (or cocoa).

  5. Prepare 1/4 tsp of vanilla extract.

  6. It’s of almond milk.

  7. You need of agave syrup.

  8. It’s 50 grams of mini chocolate chips.

Even better, using blended chickpeas mixed with almond butter and sweetened with honey, vanilla.

Blend chickpeas, peanut butter, agave nectar, and vanilla extract in a blender until smooth; transfer dough to a bowl.

Combine chickpeas, peanut butter, vanilla extract, and agave in a blender or food processor.

Remove cookie dough mixture from blender and place in a large bowl.

  1. Process the soaked dates in a food processor until smooth. You may need to scrape the sides occasionally..

  2. Add the chickpeas and process again until smooth..

  3. Add the rest of the ingredients EXCEPT for the chocolate chips and process until smooth..

  4. If the mixture is too thick, thin it out with almond milk. Add a couple of tbsp each time and blend..

  5. If you find the mixture not sweet at all, add a couple tbsp of agave syrup. The dates normally give enough sweetness. Keep in mind that the chocolate chips are gonna make it even sweeter so dont add too much syrup..

  6. Stir in the chocolate chips..

  7. Refrigerate, serve and enjoy :).
