White Pepper Crab #. Make sauce: In a wok over medium heat, heat oil and sauté onion, garlic, and pepper until fragrant. And this is indeed the BEST! The pièce de résistance of the evening - mounds of crab blanketed in a stir-fried sauce of top grade Sawarak white pepper, ginger and spring onions.

After chomping down those sweet crab meat tossed in piquant kick of white pepper, I reckoned there was some truth in that earlier statement.

It’s 500 gm of Mud Crab.

It’s 60 gm of Ground White Peppers.

It’s 150 ml of Evaporated Milk.

Prepare 100 gm of Chopped Onion.

You need 300 ml of Water.

You need 3 tbsp of Butter.

You need 1/2 tsp of Salt.

It’s 1/2 tsp of Sugar.

Return the crab to the wok and toss to coat in the sauce.
In reality, black pepper crab is simple to make and my recipe calls for only four basic ingredients.

Heat up the wok and put in 3tbsp of Butter.

Before the butter is fully melted, put in the white ground peppers and Chopped onion Stir-fry until you feel the white pepper smell.

Add in 300ml of water and 150ml Evaporated milk, bring to a boil….

Lastly add in the Crab and cover to boil for 10 to 15 minutes with medium heat… and ready to be served..
I dare say that the taste of my black pepper crab rivals many tze char stalls and at a fraction of the cost.
I used the meaty Dungeness crab for this recipe but you can get just about any crab of your choice: Sri Lankan, mud crab, flower crab.
