Chickpea Soya Curry. The chickpea soya curry which comprises of soya chunks cooked along with chickpeas with some light spices to give it an instant kick. The recipe mimics a standard mutton curry and the idea is to give it a meat-like quality without overpowering its taste. I added kale to the curry so it wouldn't have just chickpeas in it.

Ingredients of Chickpea Soya Curry

  1. Prepare 2 tbsp of Oil.

  2. Prepare 1 cup of Chickpea / Kabuli chana.

  3. Prepare 1 cup of soya chunks.

  4. It’s 1/2 tsp of Cumin seeds.

  5. Prepare 1 of bay leaf.

  6. You need 2 of Onion chopped.

  7. It’s 1 of Green Chilli slit.

  8. Prepare 1 sprig of Curry leaves chopped.

  9. It’s 1 tsp of ginger garlic paste.

  10. Prepare 1 of Large tomato chopped.

  11. You need 1 tbsp of kashmiri red chilli powder.

  12. Prepare 1/2 tsp of Turmeric powder.

  13. You need 1/2 tsp of Cumin powder.

  14. You need 1 tsp of coriander powder.

  15. Prepare 1/2 tsp of Fennel powder.

  16. You need 1 tsp of Garam Masala powder.

  17. It’s 1/4 tsp of crushed peppercorns.

  18. You need 1 pinch of Asafodita/ Hing.

  19. Prepare few of Coriander leaves chopped.

  20. You need to taste of Salt.

Next come the chickpeas for substance (plus protein, carbs, and fiber!) and the salt and curry powder for flavor.

Once the chickpeas have been sautéed until gently browned, coconut milk is added for creaminess and vegetable broth for a more soupy consistency.

If you prefer more of a stew, simply leave out the broth!

Chickpea Soya Curry instructions

  1. Wash the chickpea 2-3 times and soak them overnight or atleast 4-6 hours. Drain the water and pressure cook them with some water and salt for 3-4 whistles. Be careful not to turn them mushy but just soft. Once pressure released drain and keep aside. Reserved the water for the curry..

  2. Wash the soya granules well. Take warm water, add the washed soya chunks, cover and keep aside till further use. Just before adding to the curry drain thr water and squeeze off the water nicely..

  3. Heat oil in a pot. Add cumin seeds and bay leaf and let the seeds crackle..

  4. Add in the chopped onions, curry leaves and green chilli, saute till onion turns soft..

  5. Add in the ginger garlic paste and saute till the raw smell goes away and onion starts to brown..

  6. Add in the chopped tomatoes and saute till it turns mushy..

  7. Add in the masala powders – kashmiri chilli, turmeric, cumin, coriander, fennel, Garam masala, crushed pepper, asafoedita and saute for a min..

  8. Add in the drained cooked chickpea, soya chunks, salt to taste, mix well with the masala and cook for about 5 mins..

  9. Add in water as requirrd and cook for 10-12 mins. Adjust the gravy consistency as per your requirements and add chopped coriander leaves and take off the heat..

  10. Enjoy with rice or any flat bread..

If you want an additional vegetable, stir in some roasted cauliflower florets.

Serve with brown basmati rice or warm naan.

Sprinkle in the curry powder and garlic and stir, cooking for another minute or so.

Pour in the vegetable stock and stir to scrape up all the brown bits in the pan.
