Ingredients of Foxtail Millet Upma

  1. You need of foxtail Millet / Kangni.

  2. It’s of chopped assorted veggies (beans, carrot, peas, flat beans, etc), chopped.

  3. Prepare of oil.

  4. Prepare of mustard seeds.

  5. It’s of curry leaves.

  6. It’s of green chillies, slit.

  7. You need of urad dal (split black gram lentil).

  8. It’s of ginger, grated.

  9. You need of onion, chopped.

  10. You need of salt.

  11. You need of sambar powder.

  12. You need of turmeric powder.

  13. You need of ghee.

  14. You need of coriander leaves, chopped.

The homemade sambar powder gives a good flavor to the entire dish. upma is a easy go to breakfast idea in many home.

Foxtail Millet Upma step by step

  1. Soak the millet in sufficient water for 1-2 hours. Wash well and drain. Keep aside. Heat oil in a pan and temper with mustard seeds..

  2. After it stops spluttering, add the curry leaves, urad dal, green chilies, ginger and onion. Saute till the onion turns translucent..

  3. Add all the chopped veggies, salt and turmeric powder. Mix well and cook, covered till the veggies are soft..

  4. Add the drained millet,.

  5. 2 cups water and sambar powder. Cover & simmer till the millet is cooked and the moisture is all absorbed. Switch off the flame and add ghee. Stir and garnish with coriander leaves..

  6. Serve with coconut chutney or pickle..

Similar Recipes, Foxtail millet is "thinai" in Tamil.

Thinai upma is made from thinai rava.

You can substitute thinai rava with any other millet rava and follow the same procedure.
