Pepper shrimp is a recipe that has been influenced by our Chinese heritage on the island, but like all other trini recipes, this one has evolved to a more trini style Chinese recipe in our main stream trini cooking.
First of all, the method is a little different (at least how we do it is!) to traditional Chinese.
The home of pepper shrimp in Jamaica is "Middle Quarters" (Saint Elizabeth Parish) and though their method of preparing them is a bit different that what I'm about to share with you, Christine who sent me this recipe assures me that this recipe will rival any found on the island.
Capsicum prawns instructions

Marinate prawns add ½ tsp turmeric and some lemon juice.

Cut small pieces of potato and deep fry.

In a kadai add 2tbsp of oil and chopped onion.

Add in chopped capsicum and let cook.

Add in chopped tomato and cook for 3 mins.

Add in prawns.

Add in paprika powder, coriander powder, turmeric and garam masala.

Add in 3tbsp of water and salt to taste and cover with lid and let cook.

Once prawns are cooked,add in coriander and lemon juice, fried potato pieces and mix well.

Ready to serve.
