Low Fat Banana Bread. I've made a number of full fat banana breads from this site and this low fat version is very very good. Whisk the flour, sugar, baking soda, and salt together in a bowl. While we love the classic banana bread, after trying to lose weight after each baby, I knew I wanted a banana bread with less fat.
I was looking for a great low fat banana bread.
This is it, but I did tweak the recipe a bit.
I added nutmeg instead of cinnamon and also vanilla as others had suggested.

Prepare 2 of Banana Overripe.

You need 1 Teaspoon of Baking Soda.

It’s 3/4 Cup of Sugar Dermerra.

Preheat oven to 180 degrees celsius.

Add the vinegar to the milk and keep aside for 10 minutes to make the buttermilk.

Bowl 1 - Mash the overripe banana with the baking soda and the buttermilk.

Bowl 2 - Whisk together the oil, sugar, egg whites and the vanilla extract.

Bowl 3 - Whisk together the flour, whole wheat, cinnamon powder, baking powder and salt.

Combine the contents of bowl 3 with bowl 1 and then add the contents of bowl 2. Mix gently. Be careful not to overmix/overstir.

Pour into a prepared (well buttered) loaf tin.

Bake for 45mts till it passes the skewer test (toothpick inserted in the centre of the cake should come out clean).

I just made this banana bread, its tastes delicious but barely rose in the oven.
Is it supposed to be a low rise?

The main reason I really love this skinny banana bread recipe (besides the obvious fact that it has way less sugar and fat than any traditional banana bread recipes) is that it has FOUR large bananas mashed into it.
