Palong shaak in Bengali stands for spinach (or palak) and ghonto is referred to as mish-mash or mixture.

This Palang Shaak er Ghonto or Spinach with a medley of vegetables is cooked a little different from my Mom's.

Every home has its own little tradition of cooking the exact same dish and so taste of the same dish varies from one home to other.

Palak with mix vegetables/ palong sak er ghonto step by step

  1. Chop all the vegetables..

  2. Add tempering to pan after heating oil. Then add vegetables except pumpkin and eggplant. Cook the veggies upto half cook then add remaining pumpkin and eggplant. Cook for more 5 mins..

  3. Add palak, mix properly with the veggies. Add cumin powder, coriander powder, turmeric powder, salt and mix and cook untill palak gets cook..

  4. Add poppy paste, mix, then add little sugar. Dont cook more after putting poppy seeds, maximum for 1 min. Cover the lid. Palak veggies are done..

  5. Serve hot with roti, steam rice or khichdi..

While my Mom uses dhone-jire-ada bata, this one solely relies on Paanch Phoron and Roasted Cumin powder (Bhaja Jire Guro) to create magic.

Palong Shaker Ghonto requires only roughly chopped spinach, so this way the Saag can be chopped real fast.

The bori or vadis add a nice bite to the dish and though I am not really picky, but Urad Dal or kolai er dal Bodi go best for this recipe.

With these greens I made a saag/shaak ghonto.

My Ma would do this with spinach and call it palang shaak er ghonto (spinach cooked with a medley of vegetables).
