Taco-stuffed Zucchini Boats. This has become a favorite in my house! We LOVE zucchini boats, I originally got the inspiration for this dish from these sausage stuffed zucchini boats, another stuffed zucchini favorite! But you can literally stuff a zucchini with anything you can think up.

These make a delicious low carb meal and are perfect for using up that zucchini!

Taco Stuffed Zucchini Boats are a healthier twist on traditional taco night!

Mix taco seasoned ground beef with corn, black beans, and salsa, then fill zucchini shells and top with cheddar cheese.

Ingredients of Taco-stuffed Zucchini Boats

  1. You need 1 packages of Ground beef or ground turkey.

  2. It’s 1 packages of Taco seasoning (el paso is my favorite).

  3. You need 1 of Chopped peppers.

  4. It’s 4 of Full Zucchinis.

  5. You need 1 of Guacamole (I like to make it fresh) OPTIONAL.

  6. You need 1 1/2 packages of 4 cheese mix.

  7. Prepare of Guacamole.

  8. You need 3 of Avocados.

  9. It’s 1 of Fresh cilantro.

  10. Prepare 2 of Limes (taste as you go to determine more).

  11. It’s 1 of Chopped onions.

  12. It’s 1 of Chopped onions.

  13. Prepare 1 pinch of Salt.

  14. Prepare 1 pinch of Garlic powder.

Serve the 'zucchini tacos' with tomatoes, avocados, chopped romaine, and tortilla chips for a complete lunch or dinner that's light on calories and big on flavor!

  1. Get large pan put ground turkey or beef in, mix the chopped peppers and taco seasoning have it on low at the point.

  2. Start the guacamole listing all ingredients - taste as you go only you know how you like your guac.

  3. Mix up the ground meat you can place it on medium high now.

  4. Cut the zucchini in half and scoop out middle - you can make it super thin or thick leaving skin of zucchini.

  5. Place oven on 350 when ready….

  6. Fill the scooped out zucchini with the ground meat And top it off with cheddar cheese (I like putting a lot!).

  7. Place in the oven 10-15 minutes, after 10 minutes I like to check on it to take it out when I think its ready it's should be soft and a little golden brown on the ends (you'll know).
