Ugali, Sukuma wiki with scrambled eggs. Scrambled eggs are used to supplement left over beef. A mixture of cassava, millet and maize flour produces ugali that is very sticky while warm/hot. This ugali leaves no crumbs, even when cold.

These tomato Eggs or onion Eggs also go great with Ugali, just add Sukuma Wiki (Collard Greens) and you have a yummy Ugali meal.

It is a Swahili phrase meaning, "to stretch the week" especially when paired Ugali (cornmeal fufu).

  1. Place a cooking pot with 3 cups of water on burner.. let it boil then add maize flour in bits, stir to make Ugali..

  2. Slice 1big onion and put it in a cooking add some cooking, let the onions cook well then add in the well cut sukuma wiki. Add some salt to taste and a royco cube. Cover your pot and allow the sukuma to cook for five minutes..

  3. On a separate cooking pot put cut onions and add some cooking oil. When the onions are well cooked add the 4 tomatoes.. and some salt to taste and cover your pot to allow the tomatoes to cook well..

  4. On a dish, beat 3 eggs mix them well and add them on the cooking pot when the tomatoes have completely cooked well..

  5. Serve while hot and enjoy your meal..
