This was the first lasagna recipe I've ever made and it came out great.

Ingredients of My vegetable lasagna

  1. Prepare 1 box of lasagna.

  2. Prepare 2 box of frozen corn.

  3. It’s 2 box of pees.

  4. You need 2 box of chopped carrots.

  5. Prepare 2 can of tomato sauce.

  6. It’s 2 packages of shredded mozzarella cheese.

  7. Prepare 1 of graded Parmesan cheese.

  8. You need 2 box of of broccoli chopped up.

The veggie prep can be a bit tedious, so I either make this whole dish on a weekend when I have plenty of time, or prep the veggies on the weekend and then put the rest of the dish together on a weekday after work.

Spinach is the star of this vegetable lasagna recipe.

Yesterday I tweeted that I couldn't decide between a tomato sauce and a Béchamel/white sauce for my vegetable lasagna, as both are common and delicious in an entirely.

This lasagna is based on my spinach artichoke lasagna on the blog and the roasted eggplant lasagna in my cookbook.

My vegetable lasagna step by step

  1. preheat oven to 400.

  2. cook the lasagna and set aside.

  3. get a big deep oven pan and coat bottom with tomato sauce.

  4. then line the lasagna over the sauce over lapping eachother.

  5. add the vegetables (but not the Broccoli) and spread it out over the whole thing.

  6. then put some mozzarella cheese spread out on top also but save some you will need more.

  7. then add another layer of the lasagna (remember to over lap).

  8. then spread out the broccoli on top with some Parmesan cheese sprinkled on it.

  9. add the rest of the lasagna on top and then top that with tomato sauce and then the mozzarella cheese.

  10. cook in the oven for about 20 min or until cheese top gets browned.

I love those less-conventional vegetarian lasagnas.

The tomato sauce is the same across all three recipes, but the vegetables.

Oh my god, this is the vegetable lasagna I've been waiting over ten years for. (I'd say my whole life, but I was happy with meat lasagna until I stopped eating meat!) I can't wait to make this.
