Refried Beans … My Version. My Version these are very good! the family loved them. i havnt made these in a long long time. but finally had the time! :) renee. The original refried bean recipe my great-grandma Molly used to prepare. She always used pink beans, which I prefer, too but since they are more difficult to find nowadays, substitute pinto or black beans.
I love a bean and cheese burrito, and I especially love an enchilada plate with a side of rice and beans — the cheese gooey and melted over my beans.
I always mix my rice into the beans laced with enchilada sauce and shovel it all into my mouth at once.
But if you prefer to cook dry beans from scratch, I have also included directions below for how to make them in the Instant Pot, Crock-Pot or on the stovetop.

Ingredients of Refried Beans … My Version

It’s 1 lb of bag dry pinto beans.

Prepare 2 tbsp of grape seed oil.

Prepare 1 large of diced red or white onion.

You need 2 1/2 tbsp of jarred minced garlic.

You need 1 of salt and pepper to taste.

You need 1 tbsp of fresh minced cilantro ( optional ).

It’s 1/2 cup of shredded mexican cheese.

Prepare 1 of water.. see directions..

Prepare 1 1/2 tbsp of mexican chili powder (or regular if u don't have it).
I love refried beans or "frijoles refritos" and this homemade version tastes as good, if not better, than what you get out of a can or when out at restaurants.
For the creamiest, most flavorful refried beans, start with dried beans.
You can use pinto beans or black beans in this recipe.
Being from Texas I've eaten my weight in refried beans and these are seriously the best.
Refried Beans … My Version instructions

pick beans by taking out bad beans, rocks, dirt, etc.. rinse beans well..

place beans in a pot with 9 cups of water..

bring beans to a boil and lower to a simmer..

simmer for 3 hours.. stirring frequently and adding more water as neccessary. when beans are cooked through do not add more water. let it cook down so it thick and resembling chunky refried beans..

in a skillet place onion, oil and garlic. saute until onion is transparent and cooked through. add salt,pepper and chili powder..

mix well. then add beans.. mash beans with rest of ingredients..

fry and mix for 10 - 15 minutes. scraping bottom and sides. stirr a lot so it doesnt burn..

when heated through and all mashed up. transfer to a serving bowl. sprinkle with cheese and minced cilantro..

note: if u dont have mexican chili powder regular chili powder is fine. if u don't have cilantro u can sub for minced fresh parsely. if u don't have grape seed oil u can sub for olive oil or veggie oil..
