How to Prepare Delicious Udupi Sambar Delicious, fresh and tasty.

The main uniqueness of Udipi Sambar(Udupi Sambar) is the sweetness.

Udupi type sambar is mostly similar to our Tamilnadu Sambar but with the extra flavor of jaggery.

Once I went to Udupi Krishnar temple and during the bojan time, they served this delicious sambar.

You can have Udupi Sambar using 39 ingredients and 6 steps. Here is how you cook it.

Ingredients of Udupi Sambar

  1. Prepare 1 tsp of grated Jaggery.

  2. It’s 2 tbsp of Oil.

  3. You need 2 sprig of Curry Leaves.

  4. You need 2-3 tbsp of chopped Coriander leaves.

  5. You need 2 of Green Chillies slit.

  6. Prepare 2 of chopped Tomatoes.

  7. Prepare 2-3 tbsp of Tamarind pulp.

  8. It’s 1 tsp of Turmeric.

  9. You need 8-10 of sambar Onions peeled.

This sambar goes well with rice, dosa and also for other South Indian Breakfast.

This is the recipe served in the famed Udipi restaurants (the exponents of Mangalorean cuisine worldwide) with dosas and idlis.

Omit whichever veges you cannot find.

Udupi Sambar step by step

  1. Pressure cook dal with water and turmeric until completely soft. Mash dal. Keep aside.

  2. In a pan, heat oil and roast all spices and coconut as mentioned under sambar masala section until brown. Allow to cool completely. Add sufficient water and grind to form paste. Keep aside.

  3. In a separate big pan, heat 2 tbsp oil, fry onions, curry leaves,green chilies. Add tomatoes and fry. Add all veggies, turmeric and roast for 5 minutes until raw smell goes away. Add salt, water, cover and cook for 10 minutes until veggies are tender. Add the ground paste to veggies. Mix well.

  4. Add tamarind pulp, dal and jaggery. Mix well. Now simmer and allow to cook for 15 minutes.

  5. Now heat ghee and splutter mustard seeds. Add urad dal, jeera,hing, dry red chillies. Once urad dal browns, add curry leaves. Switch off.

  6. Add seasoning to sambar. Mix well. Add coriander leaves. Serve hot with rice, dosa, idli Vada etc.

You can make this without veges too :) Cooking and preparation time approx.

Jaggery is a very important ingredient in Udupi Sambar.

The sweet and spicy and sour and a lot of flavours make for the delicious taste of the sambar.

Add in the ground sambar masala paste.

Add half a cup of water to clean the mixie jar and add the water back to the pan.
