Mallige Idli. how to make soft rice idli with detailed photo and video recipe. a popular and soft idli variation from the karnataka or tamil cuisine is made from rice and urad dal. this idli variation is widely appreciated breakfast recipe, especially in bangalore and mysore region. it is typically served with idli sambar and with a choice of chutney recipes. It is called so, as it is very soft and white in color just like jasmine flowers. These idlis are fluffy and very light than the regular idlis.

Mallige Idli is a Karnataka specialty which literally translates to Jasmine Idlis.

The idlis are exceptionally softer, whiter in color and puffier than the regular idlis which is the reason behind this name.

In Tamil Nadu this is popular as Kushboo Idlis, named after the actress Kushboo.

You can have Mallige Idli using 6 ingredients and 8 steps. Here is how you cook that.

Ingredients of Mallige Idli

  1. Prepare 2 cup of idli rice.

  2. You need 1 cup of urad dal.

  3. Prepare 1 cup of thick poha.

  4. Prepare 1 1/2 tsp of salt.

  5. It’s 1/4 tsp of baking soda (optional).

  6. You need of Oil for greasing.

There are so many fans of this idli just like the actress herself.

Unlike normal idli, today's post is about mallige idli which has different set of ingredients all together.

Along with black gram lentils, it has sago and rice flakes for that extra soft-ness.

The other factors like fermentation and batter consistency holds good for this one too.

Mallige Idli instructions

  1. Wash all above ingredients and soak separately in sufficient water..

  2. Soak the rice for 6 to 7 hours. Udad dal and poha for 4 to 5 hours..

  3. Grind udad dal and poha together into very fine paste. Transfer to the large mixing bowl..

  4. Then grind rice into slightly coarse paste. Transfer it to the same mixing bowl..

  5. Mix well. Cover it and rest for 7 to 8 hours or till the batter ferment..

  6. Now add salt and soda and mix gently. Grease the idli mould with oil. Pour the mixture in it..

  7. Place in a steamer and steam for 15 to 20 minutes on medium low flame..

  8. Mallige Idli is ready. Serve with coconut chutney or sambar..

Grease the idli plates with oil or ghee.

Beat the fermented batter with the ladle and pour it on the greased idli plates.

Enjoy the hot mallige idlis with sambar or chutney!

After removing idli plates from idli steamer wait for some time so that idli gets cooled slightly and comes off easily from idli plates.
