Aalu Bhaja (Stir-fry Potatoes). Aalu Bhaja (Stir-fry Potatoes) Just a little deviation from traditional dish. Aloo bhaja is a traditional every day Bengali dish. Its usually made by deep frying juliened potatoes, but I have given it a slight twist by finely slicing it.

Peel the potatoes and wash it properly.

Wash the potatoes again and add turmeric powder.

To make it crispy and crunchy, do not add salt now.

  1. It’s 4 large of Potatoes, sliced.

  2. It’s 2 tbsp of Mustard oil.

  3. Prepare 1 medium of Onion, Sliced.

  4. It’s 1 of Dried red chilli.

  5. Prepare 2 tsp of Red chilli powder.

  6. You need 1/2 tsp of Turmeric powder.

  7. You need 1 of Salt to taste.

  8. It’s 1 tsp of Poppy seeds.

  9. You need 1/3 tsp of Jeera (cumin) powder.

Add the salt when potato gets almost fried.

When oil is being heated, add the shredded potatoes over medium high heat.

Wash and dry the potatoes, then cut into small sized cubes.

Heat oil in a frying pan and add chopped onion, chilli and garlic. fry for a minute; Now add potato cubes and and mix them well; Add turmeric powder, salt and pepper.

  1. Heat oil in pan.add red chilli to it.sauté sliced onions in the oil till light brown..

  2. Add potatoes to the pan.add turmeric powder & salt to it,mix it & cover the lid for 15min..

  3. Uncover the lid & add jeera powder,chilli powder,poppy seeds to the potatoes.stir-fry for 2 minutes & then serve hot..

Fry potatoes until starting to tender plus brown around the edges.

Serve hot with rice or roti.
