Now add chilli, hing, cashews and curry leaves and allow these to sizzle.

This yummy rice, seasoned with fresh ginger and garlic, curry leaves, and cinnamon, is an excellent way to use up leftover cooked white rice.

It tastes awesome hot or cold, especially hot on cold winter nights.

Best of all, it takes all of ten minutes to make.

Curd rice instructions

  1. Add about a table spoon of oil into a pan and add the cumin and mustard seeds, let it cook until they start to sizzle and add the onions. Cook until transparent.

  2. Add the garlic and allow to cook for approc 30secs, add the curd, salt, chillies and tumeric powder. Mix until salt is dissolved. Add the rice, mix it all up until the rice is covered. Allow to cook for about 1 minute. Voila, the rice is cooked. Pairs up with anythinnnnngggg or can be eaten on its own.

  3. You can even add veggies to it, use brown rice, add some potatoes and you are good to go.
