Kanchipuram masala Idli. Kanchipuram Idlis Recipe is a variety of idly from Tamil Nadu - an Indian state known for its variety of breakfast options including Idli, sambar and chutney, dosa, vadas and so many more. Some particular South Indian towns have their own variations of idlis, and this one is from the town of Kanchipuram. You could call it the signature idli of the area.

Kanchipuram idlis are a well known variety of idlis.

These are idlis spiced with cumin, pepper and ginger powder.

The idlis are cooked in bamboo casings lined with dried "mandharai" leaves.

You can cook Kanchipuram masala Idli using 12 ingredients and 11 steps. Here is how you achieve it.

Ingredients of Kanchipuram masala Idli

  1. Prepare 10-12 of mini idlis.

  2. You need 1 bowl of cabbage.

  3. It’s 1 bowl of all colours capsicum.

  4. It’s 1 bowl of green onion.

  5. It’s 1/2 bowl of tomato.

  6. It’s As needed of coriander leaves.

  7. Prepare 2 tbsp of garlic.

  8. Prepare 1 tbsp of chilli garlic paste.

  9. Prepare 1 tbsp of chilli powder.

  10. You need 1/2 tsp of turmeric powder.

  11. It’s 2 tbsp of butter.

  12. Prepare to taste of Salt.

The mandharai leaves add to the flavour of the idlis.

The batter for the idlis is mixed with spices and steamed.

Kanchipuram masala Idli step by step

  1. Take the butter in a pan(kadai).

  2. After butter is heated add mustard seeds, curry leaves and cabbage.

  3. Now roast for 1minute and add all capsicum.

  4. Mix it well for 1 minute.

  5. Then add green onions.

  6. Now add chilli garlic paste and garlic mix it well.

  7. Now add salt,then chopped tomatoes and cook for 3-4 minutes.

  8. Now add chilli powder, turmeric powder and pav bhaji masala 1tbsp.

  9. Mix it well.

  10. Add the idlis and mix it well.

  11. Now serve it and garnish with coriander.

Even though the building blocks for an ordinary idlies and this are almost similar, the beauty in a Kanchipuram Idly lies in the addition of various spices, particularly the fiery black pepper and the earthy cumin.

Kanchipuram Idli, an Idli flavoured with Ginger Powder, Peppercorns, cumin and a tempting Tempering.

The ginger powder adds a wonderful flavor to the idli along with crushed pepper-cumin.

Also generous amount of cashews makes this Idli more interesting and appetizing!

Remove and once it is slightly cooled, take it out from the banana leaf and cut it into circles.
