The idli derives its name from the famous temple-town of South-India - Kanjeevaram or Kanchipuram. Served in Sri Varadarajaperumal Temple, the idli is also known as kovil or Koil idli.

These are idlis spiced with cumin, pepper and ginger powder.

Ingredients of Kanchipuram Temple Idlis

Prepare 1 cup of Idli Rice.

You need 1 cup of Raw Rice.

Prepare 1 cup of Urad Dal.

It’s 1 tsp of Crushed pepper.

Prepare 1 tsp of Cumin.

You need Leaves of Curry.

Prepare 1 of generous pinch of Ginger Powder.

You need of Salt as per taste.
Kanchipuram Idli is a special kind of idli that is served as prasadam in the famous Varadaraja Perumal Temple in Kanchi.
It has a distinctive flavour because of the spices used in the tempering that is added to the batter.
The idlis are cooked in bamboo casings lined with dried "mandharai" leaves.
The mandharai leaves add to the flavour of the idlis.
Kanchipuram Temple Idlis instructions

Wash and soak the rice and urad dal. Grind into a smooth batter. Add salt and mix and keep aside to ferment for 7-8 hours or overnight..

Before making idlis, add all the other ingredients and give it a good mix. Now take steel glass and Grease it with ghee or oil. Pour 3/4 of the glass and steam it for 10-15 minutes or until done. Cool and demould. Serve hot with chutney and enjoy..
