Mallige Idli. the recipe for mallige idli recipe is extremely simple with basic ingredients, yet some tips to make it perfect. firstly, i have used thick poha and soaked it with urad dal as poha makes the idli soft and fluffy. alternatively, you can also use thin poha or puffed rice which does not require soaking and can be added directly to grounding. secondly, i have used idli rice for this recipe and it is heavily recommended for this recipe. you can also use sona masuri but use it only if you do not. It is called so, as it is very soft and white in color just like jasmine flowers. These idlis are fluffy and very light than the regular idlis.
Mallige Idli is a Karnataka specialty which literally translates to Jasmine Idlis.
The idlis are exceptionally softer, whiter in color and puffier than the regular idlis which is the reason behind this name.
In Tamil Nadu this is popular as Kushboo Idlis, named after the actress Kushboo.

It’s 1 cup of urad dal.

You need 1 cup of flattened rice thick.

Prepare 2 cup of idli rice.

Prepare as required of water for soaking.

It’s 1 tsp of salt.

You need as required of oil for greasing.

Mallige Idli step by step

In a large bowl take 1 cup urad dal and 1 cup poha. soak for 4-5 hours in enough water..

Soak 2 cup idli rice separately for 5 hours..

Now blend both to a smooth batter and mix well.

Rice mix can be little coarse paste too. Keep the batter in a warm place to ferment for 8-10 hours.

Add 1 tsp salt to the batter and mix gently..

Prepare the steamer and grease the idli plate with oil. Scoop the batter into idli plate greased with oil..

Place in steamer and steam for 12 minutes on medium flame or till a toothpick inserted comes out clean..

Soft mallige idli will be ready to be served along with chutney and sambhar..
Grease the idli plates with oil or ghee.
Beat the fermented batter with the ladle and pour it on the greased idli plates.
