Apricot and almond flapjacks with honey and seeds. Apricot & almond flapjacks, flavoured with honey, a wonderful sweet treat. Ideal for simple baking with the kids during the holidays. Apricot & Almond flapjacks are quite simply one of my favourite sweet treats.

Delicious as a mid-morning snack or with an afternoon cup of tea, and great as an energy pick-up when you are flagging at any time of the day.

They are an ideal recipe for packed lunches or mid-day snacks.

I've added a few Raisins to this recipe, but you can substitute these with Sultanas if you wish.

  1. You need 140 gr of butter.

  2. You need 100 gr of soft brown sugar.

  3. You need 2 tbs of runny honey.

  4. It’s 175 gr of oats.

  5. You need 5 tsp of chia seeds.

  6. Prepare 5 tsp of mixed seeds.

  7. It’s 75 gr of flaked almonds.

  8. It’s 140 gr of dried apricots.

  9. It’s 1 pinch of salt.

This Billington@s honey and apricot flapjack packs a punch with flavour.@We@ve used Billington@s light @ mild@baking honey on this recipe as it lends itself well to the texture and flavour.

It adds a sweetness without the need for refined sugar and helps retain a really nice moisture.

If using butter or margarine, melt it in a pan.

Add the syrup to the melted butter or oil.

Apricot and almond flapjacks with honey and seeds instructions

  1. Put the oven on at 150º. the butter, sugar and runny honey in a pan over a low heat and leave to melt and dissolve together. Collect the dry ingredients together. Put the apricots in a food processar and blitz for a couple of seconds..

  2. You can also chop them if you prefer. Add the almonds and apricots to the oats. Stir the pan while the last of the butter melts and the sugar dissolves..

  3. Mix the oats, apricots and nuts and add the pan mix. Stir..

  4. Add the seeds and mix well - if you dont mind getting sticky it is best to do the final mix with your hands. Put the mixture into an oven dish lined with grease proof paper..

  5. Put the dish in the middle of the oven and leave for 40 minutes. When done, take the dish out and sprinkle with the salt flakes..

  6. After about 10 mins of cooling time, cut into squares. When completely cool, put in airtight containers where they will keep for a week or so (if they last that long 😉)..

Heat the pan over a low heat until the butter has melted.

Stir in the oats, apricots, raisins and almonds and stir well.

Leave to cool then cut into squares.

My kids and I simply can't get enough of these tasty vegan apricot and date oat flapjacks.

Method: Melt the butter, sugar and syrup together, either in a bowl in the microwave or a pan on the hob.
