  1. Prepare 500 gram of fenugreek leaves.

  2. It’s 2 of brinjal.

  3. Prepare 5-6 of garlic cloves chopped.

  4. Prepare 4 of green chilli chopped.

  5. Prepare 2 tsp of oil.

  6. Prepare 3 tsp of soaked moong daal.

  7. You need to taste of Salt.

Baby brinjals are cooked with tamarind, cooled, stuffed with spice powder and fried.

You have to be very delicate while handling the brinjals not to break them apart.

Splutter mustard seeds, cumin seeds, fennel seeds, asafoetida and green chillies.

Stir fry ginger and garlic, till soft.

Methi baigan ki sabji step by step

  1. Wash and chop fenugreek seeds..

  2. Cut the brinjal into big pieces..

  3. Heat the oil in a pan. Add garlic and red chilli. Fry for two minutes. Now add soaked moong dal and cook for 2 to 3 minutes..

  4. Now fry the brinjals die 2 to 3 minutes. Now add the fenugreek leave. Cover the pan and cook for 5 minutes..

  5. Now add salt mix it and again cook until the water get evaporated completely and it become dry..

  6. Methi brinjal sabji is ready..
