  1. Prepare 500 g of potatoes cut into thin slices.

  2. Prepare 500 g of zucchini cut into thin slices.

  3. Prepare 750 of gr mizithra.

  4. Prepare 1 of ripe tomato finely chopped or grated.

  5. It’s of spearmint.

  6. You need of salt, pepper.

  7. You need 1 cup of olive oil.

This dish is a great option for entertaining because it can me made ahead.

This version is without filo pastry at all as I enjoy the taste of the vegetables and cheese alone, I also like to add extra mint and cook for a long period of time to ensure potatoes are well cooked.

Cover the bottom of the roasting pan with potatoes.

It can be made with a filo pastry crust, but I prefer this slightly lighter version.

Boureki without filo from Chania step by step

  1. Peel the potatoes and grate the skin of the zucchini, wash well and cut into thin slices in a pyrex baking tray..

  2. Put the tomato and the finely chopped spearmint on top of the zucchini and potatoes..

  3. Mix the mizithra, salt, pepper and spread them in the baking tray..

  4. Finally, add the oil and a bit of water and place in the oven at 180 degrees for about 1 1/2 hours..

You can easily make this wheat-free by leaving out the flour but this will result in a wetter dish.
