  1. Prepare of For Dough:.

  2. Prepare 1 cup of Whole Wheat Flour / Atta.

  3. It’s 1/4 tsp of Salt.

  4. It’s 5 tsp of Oil.

  5. Prepare as required of Warm Water for kneading.

  7. You need ½ + ¼ cup of Sprouted Matki / Moth –.

  8. You need 1 cup of Water.

  9. Prepare 2 tsp of Oil.

  10. It’s 1/4 tsp of Mustard Seeds / Rai.

  11. Prepare 1/4 tsp of Red Chilli Powder / Lal Mirchi.

Wheat Sev Puri step by step

  1. In a mixing bowl, take 1 cup of Whole Wheat flour add ¼ tsp of Salt and 5 tsp of Oil and mix well and knead a hard and stiff dough using warm Water as required..

  2. Cover the dough and allow the dough to rest for 30 Min..

  3. In a pressure cooker, add 2 tsp of Oil, ¼ tsp of Mustard Seeds (Rai) then add sprouted Matki (Moth) and mix well..

  4. Then add ¼ tsp of Red Chilli powder, ¼ tsp of Haldi Powder, ¼ tsp of Salt and 1 cup of Water and cook for only 1 whistles on medium flame..

  5. After 30 Min knead the dough for another 2 Min and make small round balls and start, make 4 inches small thin Puris..

  6. Give the dots all over Puris with the help of fork so that Puri does not rise up..

  7. In a similar way make all the Puris and allow it to dry on cloth for four hrs..

  8. After four hrs, Heat the Oil in a pan and start frying the Puris one by one..

  9. Pour the Puri into the pan and with the help of spoon press and fry Puri until golden brown colour from both the sides..

  10. Fry the Puri on medium flame and you can use tong to flip the Puri..

  11. In a similar way, fry all the Puris..

  12. Now start making the Sev Puri..

  13. Firstly, take one Puri and apply the Matki mixture all over Puri nicely..

  14. Then add Tamarind Chutney, Green Chutney followed by some chopped Onions, Tomatoes and freshly chopped Coriander Leaves all over the Puri..

  15. Lastly sprinkle some Sev all over the Puri and in a similar way make all the Sev Puris..

  16. Wheat Sev Puri is now ready to serve..
