This was originally given to me as a cannoli filling and although I still use it for that purpose, it also makes a great cream puff or cake filling as well as just a delicious thick pudding.
I accidentally cooked it too long and it had a curdled/lumpy texture but that was easily fixed with a hand blender.
The hand blender also whipped some air into the custard which made it fluffy but took away the thickness of regular custard.

Put the eggs and sugar in a heatproof bowl and mix well with a whisk. Add the pancake mix and quickly mix together..

Add the milk and mix gently. Next, strain the mixture. If using cake flour, the process is the same..

Wrap the heatproof bowl lightly with plastic wrap and microwave at 500 W for 2 minutes..

Remove from the microwave and mix with a whisk. Return to the microwave for another 2 minutes at 500 W..

Remove from the microwave, and mix well with the whisk. The mixture should have hardened and become creamy..

Add the butter and let it melt in the custard. Mix gently with the whisk. Last, add the vanilla essence and mix gently..

Its done! Immediately transfer into a container and let cool. Wrap with plastic wrap so that the surface doesn't dry out, pressing lightly on the plastic to ensure it's tightly wrapped..

Take half of the finished custard cream to make everyones favorite chocolate flavored custard!.

Melt the chocolate in a double boiler or put it into a heatproof bowl, wrap lightly with plastic wrap, and microwave at 500W for about 1.5 minutes to melt..
