Mukimo. Mukimo Recipe: Mukimo is a meal whose origin is Central Kenya (Agikuyu community) but it's being served in hotels across the country keeping in mind of the diversity of Kenyan people. So if you have been wondering on how to prepare these meal at home,here is a simple recipe to guide you through. Mukimo (Irio) is a Kenyan meal (predominantly from communities living around Mount Kenya) prepared by mashing potatoes and green vegetables.
Though originally from the central part of Kenya, Mukimo is now consumed amongst various communities in Kenya.
Mukimo is a popular Kenyan one-pot dish consisting of potatoes, corn, beans, peas, and greens that are cooked in water with some salt, then mashed into a purée.

You need 1 kg of Irish potatoes.

You need 2 handfuls of pumpkin leaves.

It’s 3 cups of maize (the softer the better).

It’s 1 bunch of finely chopped spring onions.

Prepare 1 spoonful of cooking oil.

You need to taste of Salt.

Mukimo instructions

Carefully peel the potatoes and slice them into halves,wash them clean and set aside..

Prepare the pumpkin leaves by removing the stalk and shred them into sizeable pieces. You can also blend them for richer colour..

Mix the pumpkin leaves,maize and potatoes in a Sufuria and add some water.Just enough for everything to cook well..

Place the cooking pot on fire and let the mixture boil for 30 minutes under medium heat.Open and add a pinch of salt and let it cook for 10 more minutes.

Remove from heat and mush everything together using a wooden spoon until all blends in well. set aside.

In another Sufuria,pour in the spring onions and cooking oil and place on fire.Mix until the onions turn golden brown then adjust the heat to minimal and add the Mashed mixture.Mix well..

You can now remove from the heat and serve while hot..
It consists of green maize, potatoes, green peas and kahurura (pumpkin leaves) all mashed together.
There are many variations of mukimo recipe.
Some people use spinach as a substitute for the pumpkin leaves or beans to substitute for the green peas.
Mukimo is a Kenyan mashed potato dish that incorporates various other ingredients to your ordinary mash, elevating it both in flavour and nutrition and giving it its signatory vivid green colour.
