Place my THAI RED CURRY PASTE, COCONUT MILK, DRIED THAI HERBS & CHILLI and FISH SAUCE in a large bowl.
Add egg and fish pieces to the curry mixture.

This will thicken the sauce slightly.
It is served along with steamed rice or Tapioca (Kappa).

Boil 12 whole kashmiri chillies in 1 cup of water. Let it simmer for 10 minutes. When this cools a bit put chillies without stalks in a grinder.Add 2tbsp coriander pwdr, ginger garlic paste, chopped shallots, turmeric pwdr,2tsp salt.Grind this to a smooth paste without water..

Heat 2tbsp oil in a pan. Add 2 pinches of fenugreek.When it turns golden add 2 sprigs of curry leaves. Add chopped tomatoes. Add little salt and saute till oil separates.Add the ground masala.Wash the grinder jar with little water and pour into pan.Masala should cook in this water and oil should separate. It will turn deep red at this stage..

While masala is being prepared, strain tamarind into a sauce pan or clay vessel (meen chatti).Add a cup pf water and bring to boil..

Now add well sauteed masala to the tamarind. Add 3/4 cup water. Stir. Check seasoning. Add fish pieces and drumstick. Bring to boil.Let simmer on low flame for 10-15 minutes. Switch off heat. Garnish with curry leaves and add a drizzle of coconut oil..
