These are flaky and tasty kachoris made with a spiced moong dal stuffing. the trick to get the flaky as well as soft texture in the kachori crust is slow frying. the oil has to be at a low or low-medium flame while frying. thus the frying takes some more time.

  1. First wash and soak moong dal in water for 5-6 hours..

  2. For making dough –In a bowl take flour and add ghee to it, mix well,add salt, carom seeds and baking powder,mix all ingredients well. Add water in small portions and knead a semi soft dough.Cover the dough with wet cloth and keep aside to set for atleast 10-15 mins..

For making filling – Heat a tsp of oil in a pan, add cumin seeds, coriander seeds and fennel seeds, saute for few secs.add gram flour and roast for a min on low flame,add turmeric powder, red chilli powder coriander powder, stir add coarsely ground daal and all remaining ingredients,mix well and cook for 2 -3 mins,until dry.Switch off the flame..

  5. Now making kachoris – Break the dough into small balls.take a portion / ball,spread in your palm,add tbsp of prepared stuffing and close nicely.Fill all kachori likewise..

  6. To roast the kachori - Heat a appam pan, keep the flame low,put some oil in each mould,place the kachoris in mould,put / brush few drops of oil over it too. Cover the pan and check after 2 -3 mins.(cook on low flame)..

  7. Flip all, cover it and cook until golden brown from both sides..

  8. Mini moong dal kachori is ready to serve. serve hot with green chutney (coriander +mint chutney) or with sauce..
